AWARD-WINNING WINES
CARPE DIEM PEDRO XIMÉNEZ TRASAÑEJO
Essence of Málaga, Mediterranean elixir — aromatic, velvety, clear, silky, and sensual. 50 cl. Contains sulfites.
This traditional sweet wine from Málaga is made from the Pedro Ximénez grape variety, using a base of Natural Sweet wine from selected berries. Maximum care is taken during extraction, racking, and fermentation, always in stainless steel. Once the wine is obtained, it undergoes an analytical and organoleptic selection process to ensure it meets the desired standards. It is then aged oxidatively in American oak barrels for a minimum of 5 years (as required by the CRDO Málaga, though in our winery it often exceeds this period, with some wines aged up to 50–60 years).

TASTING NOTES
Carpe Diem Pedro Ximénez Trasañejo is a true vinous gem, made from the Pedro Ximénez grape in its highest expression. This sweet and sophisticated wine reflects a meticulous aging process, resulting in a unique and exquisite sensory experience.
It has a very dark color, almost black, with a deep layer that reveals its concentration. The iodine-colored rim in the glass is evidence of its long aging. When swirled, it shows an oily texture with thick, dense, and deeply tinted legs, highlighting its richness and structure. On the nose, it’s an aromatic festival of fresh figs, candied fruit, and citrus notes, creating an irresistible balance of sweetness and freshness.
On the palate, this Pedro Ximénez is unctuous and expansive, with a silky texture that coats the mouth. Its passage is succulent, offering a feeling of roundness that’s perfectly balanced by its integrated acidity—preventing any cloying sensation. Its persistence is remarkable, leaving a long-lasting memory of dried fruit, caramel, and subtle toasted nuances.
PAIRING
Carpe Diem Pedro Ximénez Trasañejo is the perfect companion to end a meal or enjoy a special moment. As a dessert wine, it pairs wonderfully with acidic fruits that contrast with its sweetness, as well as nuts like walnuts or almonds, enhancing its aromatic profile. It also matches beautifully with sweet homemade pastries like fruit tarts or sponge cakes, creating a delightful harmony. For lovers of more complex flavors, this wine is an excellent choice to accompany medium- to high-intensity cheeses, such as blue cheeses, or even creamy pâtés, where the wine’s sweetness complements the intense, savory notes.
A sweet, elegant wine with a rich, enveloping texture that stands out not only for its quality but also for its versatility—an exceptional choice for those seeking a unique experience in every glass. Perfect for a special toast or to elevate any dessert or appetizer board.
