CARPE DIEM MÁLAGA PEDRO XIMÉNEZ AÑEJO

AWARD-WINNING WINES

CARPE DIEM MÁLAGA PEDRO XIMÉNEZ AÑEJO

Live the moment with a Málaga full of aroma and flavor. A dark-colored sweet wine with notes of raisins and coffee, and an unctuous appearance. The aftertaste is long and very pleasant. Wine turned into art. Contains sulfites. 50 cl.

A sweet wine made from Pedro Ximénez grapes, produced using free-run must with natural settling at low temperature and fermented under controlled conditions in stainless steel tanks. The aging process takes place in our Málaga aging cellar in 550-liter American oak barrels for 3 years (as required by the CRDO Málaga, though in our winery it usually ages longer).

Carpe Diem Málaga Pedro Ximénez Añejo is more than just a sweet wine; it is an expression of Málaga’s rich winemaking tradition — a region with centuries of history producing exceptional wines. Its complexity, balance, and character make it an essential choice for wine lovers, whether for special occasions or to enjoy an everyday glass full of flavor and tradition.

TASTING NOTES

Carpe Diem Málaga Pedro Ximénez Añejo is an exceptional sweet wine that reflects the tradition and unique character of Málaga’s Pedro Ximénez-based wines. It stands out for its authenticity and balanced harmony between sweetness, complexity, and freshness — delivering a unique sensory experience for lovers of fine dessert wines.

With its dark color and iodine-toned rim, this wine shows a rich, dense texture and oily movement in the glass that reveals its concentration. Thick, colored legs further highlight the quality of the raisins used in its production.

On the nose, it captivates with its depth and aromatic complexity. Enveloping aromas of coffee, cocoa, candied fruits, and citrus blend with the characteristic notes of the Pedro Ximénez variety — especially raisins, recalling the traditional sun-drying process typical of the region.

On the palate, this Pedro Ximénez is silky, enveloping, and surprisingly well balanced. Despite its natural sweetness, it’s never cloying, thanks to a well-integrated acidity that provides freshness and liveliness. Its texture is soft and creamy, while the finish is long, intense, and deeply pleasurable, leaving notes of dried fruits, toasty hints, and a gentle citrus touch that refreshes the palate.

PAIRING

Carpe Diem Málaga Pedro Ximénez Añejo is a versatile sweet wine, ideal either as a complement to a dish or enjoyed on its own.

Dessert wine: Perfect to end a meal, paired with traditional desserts such as tarts, sponge cakes, or stewed fruits, especially quince paste or citrus jams.
Savory pairing: Pairs wonderfully with traditional dishes like migas, offering a unique contrast between sweetness and rustic depth.
Cheese: Its balance makes it ideal for semi-cured or strong cheeses, such as blue cheeses or aged goat cheeses, where its sweetness enhances the salty intensity.
Citrus fruits: Its freshness complements the sweet acidity of oranges or grapefruit, elevating flavor complexity.

To enjoy its full range of nuances, this Pedro Ximénez Añejo is best served between 12°C and 14°C, especially when paired with desserts or fruit, or slightly cooler if served as an aperitif or with cheese.
